I bought a $60 sous vide circulator off Amazon for my pop-up kitchen and it stopped heating evenly after just 3 months of use. The temperature would jump 10 degrees, ruining a batch of short ribs I had prepped for service. Has anyone else had luck with a budget circulator holding up, or do I need to bite the bullet on a pricier one?
