TIL a roaster in Portland told me my 'fresh' beans peak 4 to 10 days after roast, not the day I buy them
I grabbed a bag of beans at a shop in Portland last week and the guy behind the counter asked when I planned to brew them. I said that night, and he laughed and said most beans hit their best around 4 to 10 days after the roast date, not straight off the shelf. I had been treating the newest bag like the best bag, which made me kind of rethink my whole habit of chasing the freshest thing. He said the beans need a few days to let off gas or the flavor comes out flat and a little sour. I brewed the same bag on day 2 and day 7 and the difference was real, day 7 was smoother and sweeter. Now I am curious if this holds for every roast level, or mostly medium and dark. Has anyone else tested a bag on different days?
