Showerthought: a guy at a cupping in Austin told me my $400 grinder was the least important thing in my kitchen
We got to talking after a Tuesday night cupping and he asked what water I brew with, and when I said tap he just laughed and handed me a cup of the same beans made with Third Wave packets. Same beans, same grind, two totally different cups, and the tap one tasted flat and chalky. Anyone else gone down the water rabbit hole, and what are you actually using at home?
Ever notice how the stuff we ignore is usually the stuff that matters most? Same thing with coffee. We geek out over grinders and pour over kettles but brew with whatever comes out of the sink. It's like spending big on running shoes and then never stretching, or buying a nice pan and cooking on a dirty stove. The water is like 98% of the cup and we treat it like an afterthought. I grabbed a cheap zero water pitcher and it changed my mornings more than any gear I've bought since.
