Remember when a coffee shop was just a place with a pot and some mugs?

About eight years back, I had to pick between keeping my old drip machine or going all in on a pour-over setup. The machine was fast and easy, but the pour-over gear, a simple ceramic dripper and a gooseneck kettle, promised something better. I went for the pour-over, and the first few tries were a mess. I remember one morning in my old apartment, I poured too fast and ended up with a cup that tasted like sour water. It took maybe a month of trying different grind sizes and pouring slower to get it right. Now, that morning ritual of heating the water, watching it bloom, is half the point. But sometimes I miss just hitting a button when I'm running late. Does anyone else feel torn between the simple old way and the new, hands-on method?
