Overheard a barista say 'espresso is just sour unless you dial it in' and I blew my whole morning

I was waiting for my drip coffee yesterday and this guy in line told his friend that espresso is basically undrinkable without perfect timing. So I got curious and spent 40 minutes watching a YouTube guy pull shots with a cheap machine. Now I'm down a bag of beans and have 8 tiny cups of bitter nothing on my counter. Has anyone actually nailed this at home without spending a fortune?

...and then you realize the beans you bought were roasted three months ago. That's the part nobody tells you. I did the same thing a few months back, spent 60 bucks on a fancy hand grinder and a used machine off Craigslist. Dialed in shot after shot, all bitter and sad. Finally figured out my "fresh" beans from the grocery store had a roast date on the bottom that was practically ancient. Now I just order from a local roaster and actually taste the difference.
