My brother told me to stop using tap water for my pour over
He said our city water in Phoenix is too hard and would make my coffee taste flat. I didn't listen for months, thinking it was just a small detail. Then I tried using a gallon of filtered water from the store for a week. The difference was huge, like going from a muddy taste to a clear, bright flavor. I could actually taste the fruit notes in my Ethiopian beans. Now I use a basic filter pitcher and it's a total game changer. Anyone else in a hard water area find a simple fix that worked?

Wait, so did you ever test your tap water to see how hard it actually is, or did you just go by taste?

Test it? I just licked a spoon after washing it and it tasted like a mouthful of pennies. That was my in-depth lab analysis. The kettle has more scale than a museum fossil, so I'm going with "very, very hard.
