Had an older guy at the roastery show me a pour over trick last weekend

I was at this little roastery in Portland waiting for my bag of beans, and this older gentleman saw me looking at their single origin ethiopian. He just casually asked if I ever let my water rest after boiling... I said I usually just pour right off the boil. He shook his head and said "you're scorching the oils, wait 30 seconds first." I figured why not try it, so I bought a cup they made that way and honestly the flavor was way smoother, no bitterness at all. He told me he's been doing pour overs since the 80s back when nobody cared about coffee like that. Now I feel like I've been doing it wrong for years. Has anyone else had a random stranger change one little step and totally shift how your coffee tastes?

Scorching the oils" yeah I stopped rinsing my filter paper once and it was a whole different cup
