Vent: Pitmaster at a small comp told me my rub was wrong, then showed me his trick
Last month at a backyard contest near Tulsa, this older guy walked over while I was seasoning my ribs and said, "You're killing the meat with that sugar bomb." He didn't wait for me to answer, just grabbed a pinch of my rub and tasted it. Then he pulled out this tiny jar of plain salt, black pepper, and a little celery seed he'd toasted himself. He told me to finish the rack with that and save the sweet stuff for the last 15 minutes. I tried it on my second rack, placed 4th out of 22, and that's the best I've ever done. Has anyone else had a stranger's unsolicited advice actually improve their cook that fast?
