Tried the snake method in my offset and the brisket came out like a charcoal briquette
So last Saturday I figured I'd try that snake method everyone on here keeps talking about, set up a neat little ring of coals in my offset with 3 chunks of hickory nestled in there. Thought I had it all figured out until I checked the temp at the 2 hour mark and it was sitting at 375 instead of the 225 I was aiming for. The snake had caught both ends and burned straight through in about 4 hours, and my 12 pound packer hit 210 way too early and came out dry as a bone. I'm guessing the offset draft pulled the fire in a way the kettle guys don't deal with, so has anyone made the snake work in an offset or am I better off sticking with a basket?
Wait, 375 at the two hour mark? That's a full 150 degrees over where you wanted to be, and both ends of the snake lit on you too. The draft on an offset is no joke, it'll pull air right across that coal ring and turn it into a blowtorch. Twelve pounds gone dry in four hours hurts just to read about.
