Tried smoking a pork shoulder at 275 instead of 225 after watching a Malcolm Reed video

The bark came out way better and it only took 8 hours instead of 14, but I had to wrap it in foil halfway through to keep it from drying out. Has anyone else bumped up their temp and still gotten good results?

Heard my buddy Dave tried this and his shoulder came out so tender he swore off low and slow forever. Said the foil wrap saved his bacon literally.

Hey I feel you on that! @ninas70's buddy Dave is onto something, the foil wrap really does save the day when you push the temp higher.
