Tried a full packer brisket on my pellet grill versus my offset smoker last weekend
The pellet grill held 225 degrees steady for 12 hours, but the bark was soft and the smoke flavor was weak. The offset gave a much better smoke ring and a crisp bark, even with the extra work of managing the fire. Anyone have tips for getting more smoke out of a pellet grill without ruining the meat?

Honestly, that's just how pellet grills are built. They're made for easy temp control, not for making heavy smoke. Tbh I see this everywhere now, the trade-off between real effort and real results. We get sold on convenience but then miss the good stuff, like that crisp bark. Ngl, you can try a smoke tube in your pellet grill, but it's never going to match an offset. Sometimes the harder way is just the right way for the job.

Used to believe I could get the same results from my pellet grill with enough tricks. Your point about trading real effort for real results hit hard. Finally tried a friend's offset last weekend and the difference in bark and smoke flavor was huge. You're right, sometimes the easy way just can't do the job right.
