Took me 6 hours to figure out why my brisket bark was too soft.
I thought it was my rub or my fire, but it turned out my smoker's airflow was blocked by creosote buildup. That cleaning sesh took forever and I still missed the family dinner. Anyone else get blindsided by something dumb like that?

Used to think bark was all about the rub and keeping the smoke clean. Then I had the same thing happen, soft bark for three smokes in a row. Cleaned out the vent pipe and the whole inside of the smoker with a wire brush and scraper. Next brisket came out with that perfect crust. Felt like an idiot for not checking the airflow first, now I clean the smoker every few months no matter what.

Solidarity man, we've all been there. Sometimes it's the dumb simple stuff that messes up a whole cook.
