Took me 2 summers to get my offset smoker to hold steady at 225, and it was one dumb thing the whole time
I run a cheap Oklahoma Joe and for two straight summers I was fighting temp swings every single cook, chasing the damper like an idiot while brisket after brisket came out dry. Turned out my firebox door gasket was leaking air the whole time, and a guy named Ray at the KCBS judging class in Memphis asked if I'd checked it, which felt pretty obvious after he brought it up. $12 of felt gasket tape later she locks in at 225 for hours with barely any fiddling. Anybody else chase a temp problem for way too long before realizing it was just a leak somewhere?
