That Franklin BBQ pitmaster in Austin told me I was rushing the bark

I drove 4 hours to Franklin Barbecue last summer and watched a pitmaster pull a brisket that looked like漆黑的charcoal. He told me I was pulling mine too early when I saw pink smoke, and now I never wrap until the bark sets like leather. Has anybody else had a famous pit boss call you out on a basic move?

Bet your bark never cracks like pavement when you slice it either.

See it different honestly. Bark can crack just like pavement if the tree is stressed enough from drought or freeze-thaw cycles. The comparison is closer than people think when you look at how conifers split in cold weather. Heard an arborist say tree bark fractures are basically the same process as road cracks just slower. Soil moisture shifts cause both to buckle and split over time. Nature does what it wants regardless of what we call it.
