Actually, brisket gets tough from heat, not just time - needs low and slow.

Totally agree with that. The meat just tightens up if it's too hot. Gotta keep that temp low for hours.

Ugh, why is brisket so tricky to get right? @the_anthony is so right about the heat being the real problem. I totally ruined my first one by cranking the heat when I got impatient. It cooked fast but was like chewing leather! Low and slow is the only way that works.
