Yeah that's just someone who doesn't know bark... happens all the time. The trick is keeping your smoke thin and blue, not that thick white stuff that makes everything taste bitter. If your fire's running clean, that dark mahogany color is just good bark, not burnt. Maybe spritz a little more to keep the surface from getting too dry early on.
