Just hit 100 briskets on my offset smoker and finally stopped being scared of the stall
Took me about 2 years and a bunch of dried out flats to get there, but last weekend I cooked a 12 pounder that came out perfect with zero wrapping. Has anyone else hit a number that made them feel like they actually knew what they were doing?

It's like everything else, once you hit that sweet spot you stop overthinking it.

@paige870 is right about the overthinking part. I used to wrap everything like clockwork but after reading posts like hers I tried going without and haven't looked back since.
