Hit 50 briskets smoked on my old offset and the last one was the best yet
It took me three years to get there, but that 50th brisket came out with a perfect smoke ring and bark. I think finally getting the fire management right in my Oklahoma Joe made the difference. Anyone else have a cook where everything just clicked after a bunch of tries?

Three years to hit 50 briskets? Man, I hope you were feeding a whole town every weekend. That "perfect smoke ring and bark" on number 50 sounds like you finally stopped treating your fire like a campfire and started actually managing it. Took you half a hundred tries to figure out your own smoker, didn't it? I guess the real question is what are you going to do with all that free time now that you don't have to babysit a bad fire?
