Finally got my brisket bark right after two years of trying
The flat was always drying out before I got that dark, crusty bark I wanted on the point. I finally tried the foil boat method I saw on a Chud's BBQ video, and let it ride at 275 for 14 hours on my offset. The bark was perfect, but man, that was a long time to figure out one thing. Anyone else have a simple fix that took way too long to find?

Ever feel like you need a PhD in meat science just to get dinner right? I spent months convinced my smoker's thermometer was broken, only to realize I was just reading it upside down. Some solutions are so simple they hide in plain sight.

Congrats on the bark victory, that's a serious win. @thomaslewis has a point about simple fixes, my own dumb one was buying a fancy water pan before realizing a cheap foil tray from the dollar store works just as well. It's wild how much time we can waste overthinking the gear when the method is what really matters. Foil boat seems to be that kind of game changer for a lot of people.
