Debate: Is Franklin Barbecue overhyped or genuinely the best?

I drove 4 hours to Austin last Saturday and waited in line at Franklin for 3 hours before getting my brisket. The bark was perfect but I swear I've had moister brisket from a food truck in San Antonio for half the price. What do you all think, is the hype worth the wait or are there better pitmasters flying under the radar?

That food truck in San Antonio probably knows what they're doing. Franklin's bark is legendary but the moisture consistency can be hit or miss depending on the day. Truth is, a lot of those smaller pits don't have to crank out 500 pounds of meat daily so they can focus on every single brisket. The hype train gets rolling and people forget there's great BBQ in random strip malls all over Texas.

@sage_lewis10 is right on the money with that. Those smaller spots don't have to deal with the same pressure, so they can take their time and get it right every time. I'd rather have a consistent great brisket from a strip mall joint than gamble on Franklin's day.
