Can we talk about how switching from a water pan to a dry drip tray changed my ribs in just two cooks?

Swapping out a water pan seems like a minor tweak to get that worked up over. Faith_lopez48 has a point about the bark, but the real difference comes down to managing your fire and smoke, not just one piece of gear. Two cooks is hardly enough time to call it a proven method anyway.

What's the big deal, is this a BBQ cook-off or a science fair project? Two cooks in and we're already writing the rule book?

That's a huge change to make, good for you for trying it. Honestly the whole water pan debate can be so confusing when you're starting out. My first few tries with ribs were a total mess before I figured out my own setup. Getting that bark right makes all the difference.
