Bought a $200 offset smoker and my pellet grill feels neglected
Picked up a used Char-Griller offset off Facebook Marketplace last month for $200, mostly to see if I could handle real fire management. After 4 cooks I finally got a decent bark, but the temp swings are still kicking my butt, especially on a windy patio in Tulsa. Anyone else go back and forth between pellet and offset, or should I just commit to one and learn it properly?
