Update: I was packing brown sugar wrong for a decade until my mother in law saw my pantry
My mother in law stayed with us last month and watched me scoop brown sugar straight from the bag into a measuring cup, packing it down with the back of a spoon. She just stood there and then said, that is why your cookies spread flat, dear. Turns out I had been measuring by volume when every good recipe I own lists it in grams, and 1 cup packed wrong can swing by almost 40 grams. I bought a $12 kitchen scale on Tuesday and my oatmeal cookies finally came out thick instead of pancake flat. Anyone know if the same thing applies to powdered sugar or am I overthinking it?
Wait, 40 grams off from just packing it wrong? That blows my mind. I've been doing the same scoop and press thing for years and never thought twice about it.
Powdered sugar is way lighter so I doubt it swings that hard, but a scale takes the guessing out either way.
