Ruined a batch of croissants because I proofed them on top of the fridge
Went to pull the tray out for the egg wash last Sunday and the butter had completely melted out, just puddles on the parchment. I think the fridge motor puts out way more heat than I figured, so now I'm looking for a cooler spot in a small kitchen. Where do you all proof when the counter is taken and the oven is off limits?
Chasing warmth around a kitchen is such a whole thing, isn't it? Every apartment has that one magic spot where dough doubles in an hour and every other spot where nothing happens. For me it's the top of the microwave, close to the stove and nowhere near the fridge motor. Also worth checking the top of your water heater closet if you have one.
