Question about a judge at the county fair telling me my sourdough was underproofed
Got knocked down to a red ribbon at the Adams County fair last month and the judge told me my crumb was "tight and gummy because you rushed the bulk." I bought a cheap 2 quart clear tub so I could actually watch the dough rise instead of guessing by the clock, and my last three loaves have been way more open. How do you all tell when bulk is done, poke test or just the domed top?
