My aunt swears by weighing flour and I've always used cups, now I'm second guessing 15 years of baking
So my aunt Rita came over Saturday to help me knock out four batches of sandwich rolls for a church thing, and she brought her little digital scale and started weighing everything out. I've been baking with measuring cups since I was a kid, and I told her it's worked fine for 15 years so why change now. She just said "scoop a cup of flour and weigh it, then do it again" and the two scoops came out 20 grams apart. That number stuck with me all afternoon. So now I'm stuck between two camps: weighing is more exact but cups are faster and it's what my hands know. Part of me thinks for bread it really matters and for cookies it doesn't, and part of me thinks I'm just making excuses because I don't want to change. Where do you all land on this, is the scale really worth it or are cups good enough for most stuff?
