Flour weight surprised me after 10 years of baking
Been baking bread for a decade, always scooped flour straight from the bag. Last week my digital scale died and I used a cup measure for a recipe. Loaf came out dense and heavy. Looked up the actual weight of a cup of flour, turns out it's 120 grams but I was packing close to 150. That's a 25% difference, explains so many failed batches. Anyone else never weighed flour and had to relearn their recipes?
Ha, sounds like the scale is the one who got you guys hooked on being exact! Real talk though, flour settles and packs down over time so that "120 grams" is kinda made up too, your hands knew the dough better than any number ever will.
