Discovered my oven runs 25 degrees hot after ruining 3 batches of macarons last month

I found out from a random YouTube comment that most home ovens are off by at least 15 degrees, so I finally bought an oven thermometer for $8 and now I adjust all my temps down by 25, anyone else ever bake for years without checking their actual oven temp?

Oven thermometers are great but they only measure temp at one spot in the oven. I found out the hard way that the actual temp can swing 20 degrees just from the front to the back. My macarons were fine on one side and cracked on the other until I started rotating the tray halfway through. Plus gas ovens tend to fluctuate more than electric ones so you might need to check the temp a few times during a long bake.

lol yeah the hot and cold spots thing got me too. i thought my oven was just broken so i bought like three different thermometers and put them all in at once. turns out my oven is fine its just that the left side runs like 15 degrees hotter than the right side. i learned that after i basically ruined a batch of cookies and had to explain to my wife why i was staring into the oven with a laser thermometer like some kinda mad scientist. rotating the tray is honestly the best hack but i still forget to do it half the time and end up with half a tray of burnt edges.
