Can we talk about why every bakery class teaches you to sift flour?

I took a class last month at the local community college and the instructor insisted on sifting flour for every single recipe. Three years of baking at home without a sifter and my cakes turn out fine. Has anyone else stopped sifting and seen no difference in their results?

Wait, you actually dropped cash just to learn how to bake bread, @richardfox? I thought everyone just watched YouTube and burned their first loaf like a normal person.

Is baking really that complicated that you need a class for it though? I get wanting to learn proper technique but flour, water, yeast, and salt is pretty straightforward. Tbh my first loaf came out like a brick but I just googled "why is my bread hard" and fixed it next time. Feels like paying $50 for something you could learn from a 10 minute video and some trial and error.
