Am I the only one who switched from a stand mixer to hand kneading and now I can't go back
Used the KitchenAid for 6 years on the same sourdough recipe, then the motor started acting up last week so I did two loaves by hand out of spite. The crumb came out so much more open that I sat there staring at it like an idiot. But my buddy Marcus runs a shop up in Boise and swears the mixer gives him a more even loaf every single time, says hand kneading is too inconsistent for selling. So now I'm torn. Is it the dough feel you get from hands that the hook can't copy, or am I just romanticizing being tired? Which side are you on and what made you pick it?
