Had to decide between two different types of floral foam for a huge wedding arch last month.
It was for a 10-foot arch in Portland, and the choice was between the standard green foam and a newer, more expensive 'instant water' foam. I went with the green stuff to save cost, and it was a huge mistake because it dried out way too fast in the sun. Has anyone found a reliable foam for big outdoor pieces that won't fail by the ceremony?

Wait you used dry foam for a ten foot arch? That's asking for trouble in the sun.

Actually dry foam holds up fine if you seal it right, I've seen it last all summer.

Man I learned that lesson the hard way last summer with a small arch for my daughter's birthday party. I figured hey, a little extra sealant and it'll be fine. Well the sun hit it just right and that foam basically turned into crumbly cheese by noon. Had balloons duct taped to a PVC pipe by like 2pm looking like some kind of sad garden sculpture. So you might have better luck than me but I'm still scarred from that meltdown.
