Talked to a kombucha brewer who said temperature control matters way more than the starter ratio

They told me they keep their batch at exactly 78 degrees with a heating wrap and I thought about the 5 batches I ruined last summer sitting in my 90 degree kitchen, anyone else been messing up the basics?

Switching to a heating wrap was a game changer for me after losing batches to heat swings. Kept mine at 77-78 and haven't had a mold issue since.
