My sourdough starter finally doubled in size after 72 hours of looking completely dead.
I almost tossed it, but that stubborn jar of goo on my counter now has a name and a permanent home, so has anyone else had a starter take forever to wake up?

That's a huge relief, right? Spencer's right that it can take a few days, but honestly, 72 hours with zero bubbles or growth at all would have me worried too (I'd be poking it every hour). The wild yeast on your flour or in your kitchen air can just be super lazy sometimes. Giving it a name is the smart move, it makes you less likely to give up on it when it's being slow.

Totally get the poking it every hour thing... my first starter was like watching paint dry for almost five days. Named it "Glenn" after how slow it moved. Sometimes they just need a little extra time to wake up.

72 hours" is actually pretty normal for a brand new starter to show its first real activity.
