My kraut blew its lid at 3 AM last night
I was using a standard airlock on a quart jar, but the cabbage was way too active. It made a huge mess all over my kitchen counter. Anyone have a better setup for really fizzy ferments?

Overfill anything and it makes a mess.

Sounds like your kraut was trying to audition for a food volcano reality show. I just use a bigger jar with more headspace and a plastic bag filled with brine as a weight, keeps the mess contained. On the bright side, at least you know your fermentation is alive and kicking, right?
