Had a batch of sauerkraut go slimy last week... my pH meter was reading 4.2 but the smell was off. Turns out I wasn't cleaning the probe right after each use.

Remember my buddy had the same slimy kraut problem last summer. He kept getting good pH readings too, which really confused him. It turned out his meter needed a fresh calibration solution, the old stuff had gone bad. He learned the hard way that cleaning and calibrating are both super important.

Oh man, that's such a classic and frustrating trap. I've totally been there, trusting a meter that was lying to me the whole time. It's the worst feeling when you're doing everything right by the book, but your tools are off. Makes you want to just go back to the old taste-and-pray method sometimes.

Totally feel you, @elliotc10. I started keeping my calibration packets in the fridge after a batch went bad on me. Fixed my meter issues right up.
