Read a blog post from a drywaller in Florida who said anything over a 10-inch knife on a steep pitch is just asking for trouble. The weight and leverage make it hard to control, especially with overhead work. He recommended using a smaller, lighter knife for ceilings to keep the mud from sagging. Makes total sense after thinking about the physics of it.

Depends on your technique. A 12-inch knife works fine if you keep your mud tight and use a solid pole.
