My foreman in Fresno said to never finish flatwork after 2pm in July, and I laughed at him
I poured a 12x20 slab at 3pm and spent the next hour chasing a crust that set up faster than my float could keep up with. Now I want to know, is there a real cutoff time you all go by, or do you just watch the mix and the shade?
Hot weather concrete is just like anything else in life, the window you get to work with shrinks the harder the conditions get. Your foreman wasn't being superstitious, he was just passing down what a bunch of guys learned the hard way before you, that July sun in the valley will pull the water out of a mix before you can even get your knee boards on it. I've seen guys start at 6am and still fight it by noon when it's pushing 105, so shade, wind, and how wet the mix shows up matter way more than the clock ever will.
