I figured he was joking but after a 45-minute bottom time in 48-degree water off Port Townsend last month, that burst of warmth bought me an extra 10 minutes of comfort before the shivers set in - anyone else pick up weird tips from the salty guys that actually work?

Funny how the crusty old guys always have weird tricks that actually work. Same thing happens with mechanics and cooks - the veterans know some janky shortcut that looks stupid until you try it and realize it's genius.

Hold on Alex, not all of us old guys are what you'd call "crusty" yet. But yeah, you're right about the tricks. Worked the line with a guy who'd been doing it thirty years, he showed me you can fix a broken hollandaise by adding a single ice cube and whisking like crazy. Looks completely wrong, saves the batch every time. The veterans earned those shortcuts.
