Funny how the simplest things can trip you up for so long. My buddy tried to grill a whole salmon filet with the skin on once, and it just stuck and tore apart. Turns out he never oiled the grill grates or the skin itself. He was so mad after buying that nice piece of fish. What's the worst cooking mistake you've made more than once?

My old chef in Miami used to say you need a full inch between each scallop. The steam from a crowded pan makes them boil instead of sear. I wasted so much good seafood before I learned that simple rule. Now I cook them in two small batches even if it takes longer. The crust you get is totally worth the extra time.
