Vent: Had to pick between a $1200 combi oven and a $900 deck oven for my new spot's main workhorse.
I went with the deck oven thinking it'd be more reliable, but after 6 months the recovery time on busy nights is killing my ticket times, so has anyone switched from a deck to a combi and actually found it worth the extra cash?

Ugh, that's the worst kind of buyer's regret! I'd say the extra upfront cost is probably worth it if your current oven is holding you back every single night. Sounds like a switch might save your sanity and your ticket times.

My buddy runs a food truck and held onto his old grill for way too long. He was always the last one to leave the market because it took forever to cook anything. The night he finally replaced it, he cut his clean-up time in half and actually got home before midnight. That cheap old piece of gear was costing him more in lost time and stress than a new one ever did.
