Unpopular opinion: Sous vide is ruining people's knife skills

Last month I had a new line cook join my kitchen who swore by sous vide for everything. He couldn't slice a raw chicken breast evenly to save his life. The guy had been cooking professionally for three years but never learned proper knife work because his last kitchen just vacuum sealed everything. I made him spend a week breaking down whole chickens by hand and he admitted it was the most useful thing he'd done in years. Has anyone else noticed younger cooks skipping the basics because of gadgets?

And yeah gadgets can't replace actual knife work. Sous vide lets you skip precision cutting but that skill matters when you need to butterfly a breast or portion something fast. Pretty much every pro kitchen still needs real knife skills at some point.
