That Tuesday brunch shift that turned into a total nightmare

Last week we had a 40-top show up 20 minutes early for their reservation, and my sous called out sick right before service. I had to work the line solo for 2 hours while also trying to keep the expo board from falling apart. By noon we were out of hollandaise and had to quick-whip up a second batch with only 6 eggs left in the walk-in. Has anyone else had a shift where everything just stacked against you and you barely survived?

Planning and prep could have easily prevented all of that, lol.

Depends on what "all of that" even means though. Sometimes people act like forgetting a rain jacket or a backup battery is some kind of life or death crisis. Real life isn't a checklist and stuff happens anyway no matter how much you plan. Not everything needs to be treated like a wilderness survival exam.
