Showerthought: Watching a line cook fix my station made me realize my knife skills were holding me back

I was working a Friday night service at this little Italian place downtown last month when the head chef stopped by my station during a lull. He watched me dicing onions for maybe 30 seconds, then just said "hand me your knife" and showed me the claw grip in a way that clicked instantly. I had been using a pinch grip that was way too tight, wasting motion on every cut. He timed me on an onion before and after - 90 seconds down to 45 just from letting the blade do the work. Has anyone else had a senior cook totally reset how you hold a knife just by showing you once?

Yeah but @noahs82, that 'one tweak' idea ignores how muscle memory takes real time to rebuild and sticking with bad habits is harder to break than folks admit.

It's wild how one small tweak from someone who knows their stuff can save you that much time, happens with everything from typing to driving.
