My old chef in Boston bet me $20 I couldn't break my habit of tasting with the same spoon
When I worked the line at a spot near Quincy Market about 4 years ago, my head chef Marco kept yelling at me for double dipping my tasting spoon into the sauce. I thought he was just being picky about health code stuff, but he pulled me aside and bet me $20 I couldn't go one full shift without doing it. He won in the first hour, and I actually learned more about my own palate that night than in the past year of cooking. Turns out when I stopped tasting the same bite over and over, I started noticing when the salt was actually right instead of just chasing it. What weird kitchen habits did your first real mentor break you of?
Tasting the same bite twice is basically lying to your own tongue. Your palate gets used to the salt after one taste, so you just keep adding more chasing a ghost. Simple fix but it changes everything.
