I finally gave in and tried a meat thermometer for my steaks after years of eyeballing it
I always thought those instant-read thermometers were just another gadget for home cooks who can't trust their instincts (you know, the fancy ones at Williams Sonoma). Then I overcooked a $45 dry-aged ribeye last Sunday and my wife just looked at me and said "maybe it's time." Has anyone else here had that moment where a tool they dismissed actually proved them dead wrong?

johns18 nailed it with the "magic wand" thing. I dropped $60 on a prime rib once and ruined it. Bought a Thermapen the next day. Now I pull my steaks at 125 for medium rare and they come out perfect every time. No more guessing, no more crying over ruined expensive meat.

Wait, hold on. A forty-five dollar steak? That's like a whole car payment worth of meat on one plate. Man, that changes everything. I can totally see how after that disaster you'd be willing to try a magic wand or whatever it takes. Honestly, I'd probably start consulting a psychic before cooking another one at that price point.
