Hot take: I finally understood the point of a tasting menu after a meal in Portland three years ago.

I was broke and just went for the bar snacks, but watching the chef's team plate each tiny course with total focus showed me it's about the story, not just the food. Anyone else have a moment where a simple meal changed how you think about service?

Okay but come on, it's still just dinner. I get that the show is part of it, but sometimes I wonder if we're all just paying extra to watch people be really intense about putting a single pea on a plate. The story is nice, but my main story is usually about being hungry again an hour later.

That Portland chef's focus reminds me of how we watch baristas now, like @tessa_roberts1 said.
