Hit my 100th ticket in a single dinner service last night
I thought I was seasoned enough to handle anything, but that number caught me off guard and I had to call for backup on the grill station. Has anyone else had a line count that made them realize their prep system isn't cutting it?

Your prep system probably isn't the issue here. 100 tickets in a single service is a volume problem, not a prep problem. If you're prepping for that many covers on a regular basis your walk-in would be overflowing with waste on slower nights. Prep systems are built around averages, not peaks. You're chasing a ghost if you think you can prep for your absolute busiest night every single day. The real issue is learning to communicate better when you're getting your ass kicked. Calling for backup isn't a failure of prep, it's a failure of timing. You could have called sooner and saved yourself the scramble.
