Blew $600 on a fancy sous vide setup in 2019, used it 4 times
I got talked into buying a Polyscience sous vide circulator back in 2019 after a chef friend swore it would change my whole approach to proteins. I spent $600 on the unit plus another $80 on a vacuum sealer and bags, and I used the thing maybe 4 times in two years before it ended up in a cabinet. The truth is most of my cooking is high heat and fast, so waiting around for a water bath to come up to temp never fit how I work in a real kitchen. I ended up selling the whole setup for $150 on a local classifieds site, which means I ate about $530 for basically nothing. If you are thinking about jumping into sous vide, borrow one from a coworker for a month first and see if you actually reach for it. Did anyone else get roped into a gadget that just sat there collecting dust?
