Taco truck in a gas station parking lot outshines every sit-down spot

Last month I was hauling a load through Bakersfield and stopped for gas. There was a taco truck wedged between the pumps and a dumpster, and the al pastor had that crispy edge you only get from a real trompo. Three tacos cost me $7.50 and I still think about them. Anyone else found gold in a spot that looks like a health code violation waiting to happen?

That trompo setup is the whole secret, right there. I've noticed the places that roll their own meat and shave it fresh always beat the spots with a pre-made catering tray sitting in a warmer. There's a spot in Fresno off the 99 that runs out of a converted school bus with mismatched tires, and their cabeza is somehow cleaner tasting than a $40 plate downtown. The funny thing is those fancy places are the ones that should have an inspection score on the door, not the bus. Honestly I wonder if the grime is part of the flavor at this point.
