I paid $2.50 for a mystery meat taco from a gas station in Tucson and I'm still thinking about it

Stopped at a Circle K off I-10 in Tucson two Fridays ago because I was running on empty and saw a hand painted sign for tacos out back. The guy had a little cart set up behind the dumpsters and charged me $2.50 for two tacos with some green salsa I couldn't name. I figured I'd be sick by midnight but it was honestly better than the $14 plate I got at a sit down place downtown the night before. Now I'm wondering if I've been sleeping on gas station food this whole time, has anyone else found a spot like this?
